- Preheat oven to 350°F (180°C) and grease a small 6-inch round or 4×6-inch baking dish.
- Blend the oats, banana, cocoa powder, milk, egg, maple syrup, vanilla, baking powder, and salt until smooth, about 30 seconds.
- Fold in the 2 tbsp chocolate chips, then scrape the batter into the prepared dish.
- Top with extra chocolate chips and bake for 20 to 25 minutes, until the top is set and a toothpick inserted in the centre comes out with moist crumbs.
- Let rest 2 minutes, then scoop into bowls and serve warm.
Notes
This recipe works best with a very ripe, spotty banana for natural sweetness. If you only have a small banana (under 4 inches), add an extra tablespoon of milk to keep the batter pourable. The baked oats will be soft and fudgy right out of the oven; as they cool, they firm up slightly but remain tender.
