- Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish. In a large bowl, whisk together oats, cocoa powder, baking powder, and salt.
- Make a well in the dry ingredients and add mashed banana, maple syrup, egg, vanilla, and milk. Whisk until mostly smooth.
- Pour the wet mixture into the dry and fold together with a spatula until no streaks remain. Fold in the chocolate chips.
- Scrape batter into the prepared dish and bake for 25 to 28 minutes, until the center is set and a toothpick comes out with moist crumbs. Let cool 5 minutes, then spoon into bowls and drizzle with nut butter and extra chocolate chips.
Notes
The baked oatmeal will puff up slightly in the oven and settle as it cools. For a firmer, sliceable texture, let it rest for a full 10 to 15 minutes before serving.
