Ingredients

  • 4 skin-on salmon fillets, about 6 oz each
  • 3 tbsp brown sugar, packed
  • 2 tbsp soy sauce
  • 1 clove garlic, minced
  • 1 tsp Dijon mustard
  • 1 tbsp olive oil
  • Salt and pepper
  • Toasted sesame seeds and sliced green onion, for garnish

Method

  1. Pat salmon dry, season with salt and pepper. Heat olive oil in a nonstick skillet over medium-high. Sear salmon skin-side down 3 to 4 minutes without moving.
  2. While it sears, whisk brown sugar, soy sauce, garlic, and Dijon until smooth.
  3. Flip salmon, pour glaze into the pan, and baste frequently until thickened and sticky, 2 to 3 minutes.
  4. Plate the salmon, spoon over the pan glaze, and top with sesame seeds and green onion. Serve immediately.

Notes

The glaze turns thick and candylike fast, so have your plates and sides ready before you start step 3. If your fillets are on the thicker side, cook them at the lower end of the time ranges and test with a fork for flakiness.
