- Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan. In a large bowl, mash the bananas, then whisk in the melted butter, brown sugar, sour cream, eggs, and vanilla.
- In a separate bowl, whisk the flour, baking soda, and salt together.
- Fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
- Scrape the batter into the prepared pan. Bake for 50 to 55 minutes until a toothpick inserted in the center comes out with a few moist crumbs.
- Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
Notes
If you don’t have sour cream, plain yogurt works just as well. This bread tastes even better the next day as the flavors meld, so it’s a great make-ahead treat.
