- Melt 1 cup (2 sticks) butter in a light-colored pan over medium heat, swirling, until amber with brown specks, 5 to 7 minutes. Pour into a bowl (you'll have about 3/4 cup plus 2 tbsp) and cool completely.
- Whisk the cooled brown butter, brown sugar, and granulated sugar until smooth. Whisk in the egg and vanilla. Stir together flour, baking soda, cinnamon, and salt, then add to wet ingredients and stir just until combined. Fold in oats and raisins.
- Cover and refrigerate the dough at least 30 minutes, up to 24 hours.
- Preheat oven to 350°F (175°C). Scoop 1.5-tablespoon portions onto parchment-lined sheets, spacing 2 inches apart. Bake 10 to 12 minutes, until edges are golden and centers look slightly underdone.
- Cool on the sheet for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.
Notes
The total time does not include the 30-minute dough chill. For the best flavor, let the dough rest overnight in the fridge. The cookies will seem soft when they come out of the oven, but they firm up as they cool.
