- Brown the butter in a saucepan over medium heat until amber and nutty, about 5 to 7 minutes. Pour into a bowl to cool.
- Whisk the warm brown butter with both sugars until glossy, then whisk in the eggs, egg yolk, and vanilla.
- Fold in the flour, baking soda, and salt until barely combined, then fold in the oats and pecans just until no dry spots remain.
- Scoop the dough onto parchment-lined sheets and bake at 350°F (175°C) for 10 to 12 minutes, until edges are golden but centers look slightly underdone.
- Let cookies rest on the pan for 5 minutes, then move to a wire rack to cool completely.
Notes
The dough benefits from a 30-minute chill if you have time, which deepens the brown butter flavor. The cookies will look soft when they come out of the oven but firm up as they cool, so resist the urge to overbake.
