Ingredients
  

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 3 large overripe bananas, mashed
  • 3 large eggs
  • 1/2 cup full-fat sour cream
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt

Method
 

  1. Preheat oven to 350°F and butter and flour a 9x5-inch loaf pan. Brown the butter in a saucepan over medium heat, swirling often, until amber and nutty, about 5-7 minutes. Cool until warm.
  2. Whisk together browned butter, sugar, mashed bananas, eggs, sour cream, and vanilla until smooth.
  3. In a separate bowl, combine flour, baking powder, baking soda, and salt. Fold the dry ingredients into the wet mixture just until no streaks remain.
  4. Pour batter into the prepared pan and smooth the top. Bake 60-70 minutes until a toothpick inserted in the center comes out with moist crumbs. Cool in pan 10 minutes, then turn out onto a rack to cool completely.
  5. Once fully cool, slice and serve with powdered sugar or salted butter.

Notes

This cake tastes even better the next day as the banana flavor deepens. If you want to bake ahead, wrap it well after cooling and store at room temperature overnight; no need to refrigerate until day two.
