Broccoli Feta Soup Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, sliced
  • 1 large head broccoli (about 400g / 14oz), florets and chopped stalk
  • 4 cups (1 litre) vegetable broth
  • 150g (5oz) feta cheese, crumbled, plus extra for serving
  • Juice of 1/2 lemon
  • Salt and black pepper, to taste

Method
 

  1. Heat the olive oil in a large pot over medium heat. Cook the onion for 5 minutes until soft, then add the garlic and cook 1 minute more.
  2. Add the broccoli and broth. Bring to a boil, then simmer for 12 to 14 minutes until the broccoli is very tender.
  3. Remove from heat and blend the soup with an immersion blender until completely smooth.
  4. Stir in the feta and lemon juice until the cheese mostly melts. Season with salt and pepper. Ladle into bowls and top with extra crumbled feta.

Notes

If you don’t have an immersion blender, let the soup cool for 5 minutes before blending it in batches in a countertop blender. This is a soup that thickens as it sits, so thin it with a little extra broth when reheating.
