Broccoli Cheese Casserole Recipe

Ingredients
  

  • 4 cups broccoli florets
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 ½ cups whole milk
  • 2 cups sharp cheddar cheese, shredded from a block
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 1 cup crushed buttery crackers (about 24 Ritz crackers)
  • 2 tbsp unsalted butter, melted

Method
 

  1. Heat oven to 375°F. Melt 2 tbsp butter in a saucepan over medium heat. Whisk in flour and cook 1 minute.
  2. Slowly whisk in milk and cook until thick, about 3 minutes. Remove from heat and stir in cheese, salt, and pepper until smooth.
  3. Blanch broccoli in salted boiling water for 2 minutes. Drain, rinse with cold water, and pat completely dry.
  4. Fold broccoli into the cheese sauce, then scrape into a buttered 2-quart dish.
  5. Combine crushed crackers and melted butter, then sprinkle over the top. Bake 25 to 27 minutes until bubbly and golden.
  6. Let stand 5 minutes, then serve hot.

Notes

Letting the casserole rest for a few minutes out of the oven helps the sauce set so it doesn’t run when you dish it up. For the crunchiest topping, use fresh cracker crumbs and don’t pack them down too tightly.
