- Mix chopped broccoli, cheddar, cream cheese, garlic, 1/4 tsp salt, and 1/8 tsp pepper in a bowl until combined.
- Cut a pocket into each chicken breast, stuff with filling, and secure with toothpicks.
- Season the outside of the chicken with remaining salt and pepper. Heat olive oil over medium-high, sear breasts seam side up 3-4 minutes, flip, and sear second side 3 minutes.
- Pour broth into the pan, transfer to a 375°F (190°C) oven, and bake 18-22 minutes until 165°F. Rest 5 minutes, remove toothpicks, slice, and serve with pan juices.
Notes
Use freshly grated cheddar for the smoothest melt. If your skillet handle is not oven-safe, wrap it tightly in a double layer of foil before baking. Letting the chicken come to room temperature for 15 minutes before cooking helps the center heat more evenly.
