Broccoli and Cheese Stuffed Chicken Recipe

Ingredients
  

  • 4 boneless skinless chicken breasts (about 6 oz each)
  • 1.5 cups finely chopped broccoli florets
  • 1 cup shredded sharp cheddar cheese
  • 2 oz cream cheese, softened
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/4 cup chicken broth
  • toothpicks

Method
 

  1. Mix chopped broccoli, cheddar, cream cheese, garlic, 1/4 tsp salt, and 1/8 tsp pepper in a bowl until combined.
  2. Cut a pocket into each chicken breast, stuff with filling, and secure with toothpicks.
  3. Season the outside of the chicken with remaining salt and pepper. Heat olive oil over medium-high, sear breasts seam side up 3-4 minutes, flip, and sear second side 3 minutes.
  4. Pour broth into the pan, transfer to a 375°F (190°C) oven, and bake 18-22 minutes until 165°F. Rest 5 minutes, remove toothpicks, slice, and serve with pan juices.

Notes

Use freshly grated cheddar for the smoothest melt. If your skillet handle is not oven-safe, wrap it tightly in a double layer of foil before baking. Letting the chicken come to room temperature for 15 minutes before cooking helps the center heat more evenly.
