Ingredients

  • 4 slices thick-cut brioche, about 1 inch thick
  • 3 large eggs
  • 3/4 cup whole milk
  • 1 tsp vanilla extract
  • 1 tbsp granulated sugar (optional)
  • Pinch of kosher salt
  • 2 tbsp unsalted butter

Method

  1. Whisk the eggs, milk, vanilla, salt, and sugar (if using) in a shallow dish until the sugar dissolves.
  2. Melt 1 tbsp butter in a nonstick skillet over medium heat. Dip two brioche slices in the custard for about 10 seconds per side, let excess drip off, and cook until golden, 3-4 minutes per side. Repeat with remaining butter and bread.
  3. Serve hot with a pat of butter and warm maple syrup.

Notes

Keep cooked slices warm in a 200°F oven on a wire rack set over a baking sheet if you're cooking in batches. This keeps the bottoms from steaming and going soft.
