Ingredients
Method
- Stir warm milk, 1 tbsp sugar, and yeast together. Let sit for 8 minutes until foamy.
- Add remaining 2 tbsp sugar, flour, salt, and 2 eggs. Knead with dough hook on low for 2 minutes, then medium-low for 8 minutes. Add butter piece by piece, then knead another 4 to 5 minutes until smooth and glossy.
- Shape dough into a ball, place in an oiled bowl, cover, and let rise until doubled, 1 to 1.5 hours.
- Punch down dough, divide into 8 equal pieces, and roll each into a tight ball. Place on a parchment-lined baking sheet 2 inches apart.
- Cover and let rise for about 45 minutes until puffy. Preheat oven to 375°F (190°C). Brush with egg wash (1 egg whisked with 1 tsp water) and bake 18 to 22 minutes until deep golden. Brush hot buns with melted butter and cool on a rack.
Notes
The hands-on prep time is about 30 minutes, but the dough needs a first rise of 1 to 1.5 hours and a second proof of about 45 minutes. Your total time from mixing to warm buns will be roughly 3.5 hours. Unsalted butter lets you control the salt; reduce the added salt by 1/4 tsp if using salted butter.
