- Pound the chicken cutlets between plastic wrap to ¼ inch thickness. Season both sides with salt and pepper.
- Set up three bowls: flour, beaten eggs, and panko mixed with Parmesan. Dredge each cutlet in flour, dip in egg, then press firmly into the panko to coat.
- Heat oil in a large skillet over medium-high until shimmering. Cook cutlets in batches, 4 to 5 minutes per side, until golden and 165°F internal temp.
- Slice the chicken against the grain and serve hot with lemon wedges.
Notes
Let the cooked cutlets rest on a rack for a minute before slicing. This keeps the crust from steaming. If you skip the Parmesan, add a pinch of salt to the panko to compensate.
