Ingredients
  

  • 2 large boneless, skinless chicken breasts (about 1½ lb total), halved horizontally into 4 cutlets
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • ¼ cup finely grated Parmesan (optional)
  • 3 tbsp neutral oil (vegetable, canola, or avocado)
  • Lemon wedges, for serving

Method
 

  1. Pound the chicken cutlets between plastic wrap to ¼ inch thickness. Season both sides with salt and pepper.
  2. Set up three bowls: flour, beaten eggs, and panko mixed with Parmesan. Dredge each cutlet in flour, dip in egg, then press firmly into the panko to coat.
  3. Heat oil in a large skillet over medium-high until shimmering. Cook cutlets in batches, 4 to 5 minutes per side, until golden and 165°F internal temp.
  4. Slice the chicken against the grain and serve hot with lemon wedges.

Notes

Let the cooked cutlets rest on a rack for a minute before slicing. This keeps the crust from steaming. If you skip the Parmesan, add a pinch of salt to the panko to compensate.
