Bread Machine Pumpkin Bread Recipe

Ingredients
  

  • 1 ¾ cups (220 g) all-purpose flour
  • 1 cup (200 g) granulated sugar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp fine sea salt
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ⅛ tsp ground cloves
  • 2 large eggs
  • 1 cup (245 g) canned pumpkin purée
  • ½ cup (120 ml) vegetable or canola oil
  • 1 tsp vanilla extract

Method
 

  1. Whisk the eggs, pumpkin purée, oil, and vanilla in a bowl until smooth, then pour into the bread machine pan.
  2. Stir together the flour, sugar, baking soda, baking powder, salt, and spices, then sprinkle evenly over the wet ingredients. Do not stir.
  3. Place the pan in the machine, close the lid, and select the quick bread or cake cycle. Press start and let it mix and bake, about 50 to 60 minutes. Check with a toothpick at the end; if it needs more time, run a second quick bread cycle and check every 10 minutes.
  4. Let the loaf rest in the pan for 10 minutes, then turn out onto a wire rack. Cool at least 30 minutes before slicing.

Notes

If your bread machine model does not have a quick bread or cake cycle, the basic white cycle will also work, but pause the machine after the first knead finishes so it skips the rise. Check your manual for the best setting for batter breads.
