Bread and Butter Pudding Recipe

Ingredients
  

  • 8 slices stale white bread, crusts on (about 6 cups torn)
  • 3 tbsp unsalted butter, softened, plus extra for the dish
  • 1/3 cup raisins or sultanas (optional)
  • 4 large eggs
  • 1/3 cup granulated sugar
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 2 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 2 tbsp brown sugar

Method
 

  1. Heat oven to 350°F (180°C) and grease a 2-quart baking dish. Spread butter on one side of bread slices, cut in half, then layer butter-side up with raisins in the dish.
  2. Whisk eggs and granulated sugar until pale, then whisk in milk, cream, vanilla, and cinnamon until smooth.
  3. Pour custard over the bread, press down gently, and let soak for 10 minutes.
  4. Sprinkle brown sugar over the top and bake 35–40 minutes until deep golden and centre wobbles gently.
  5. Rest for 10 minutes, then slice into squares and serve warm with cream or ice cream.

Notes

If your bread is fresh, dry the slices in a 300°F oven for a few minutes before buttering to avoid a soggy pudding. The pudding will thicken as it sits, and leftover squares are just as good the next day.
