Bow Tie Pasta Salad Recipe

Ingredients
  

  • 1 lb bow tie pasta
  • 1 red bell pepper, diced small
  • 1 yellow bell pepper, diced small
  • 1 pint cherry tomatoes, halved
  • ½ medium red onion, thinly sliced
  • 1 cup pitted black olives, sliced
  • ½ cup grated Parmesan cheese
  • ¼ cup packed fresh basil leaves, torn
  • ½ cup extra-virgin olive oil
  • ¼ cup red wine vinegar
  • 1 clove garlic, minced
  • 2 teaspoons dried Italian seasoning
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Method
 

  1. Cook the pasta in salted boiling water until al dente, 8 to 10 minutes. Drain and rinse under cold water until completely cool.
  2. While the pasta cooks, dice the bell peppers, halve the tomatoes, slice the onion, and slice the olives.
  3. Whisk together the olive oil, red wine vinegar, garlic, Italian seasoning, salt, and black pepper until combined.
  4. Place the cooled pasta in a large bowl, add the vegetables, and pour the dressing over everything. Toss well, then fold in the basil and Parmesan just before serving.

Notes

Let the salad sit at room temperature for 10 minutes after tossing so the flavors meld. If making ahead, wait to add the basil and Parmesan until right before serving and refresh with a small splash of vinegar if needed.
