- Season salmon with salt and pepper. Heat oil in a large skillet over medium-high heat. Sear fillets for about 4 minutes per side until golden and nearly cooked through. Transfer to a plate.
- Reduce heat to medium. Add garlic and ginger, cook 30 seconds. Pour in bourbon, soy sauce, brown sugar, and rice vinegar. Simmer until reduced by half, 2 to 3 minutes. Stir in cornstarch slurry if using, cook 1 minute.
- Return salmon to the pan, spoon glaze over the fillets, and cook 1 to 2 minutes until glazed and cooked through.
- Serve immediately over rice, topped with sliced scallions and sesame seeds if desired.
Notes
If you prefer a thinner glaze, skip the cornstarch and let the sauce bubble an extra minute to reduce naturally. Let the salmon rest a couple of minutes after searing for juicier results. The dish can be refrigerated for up to 3 days; reheat gently in a skillet with a little water.
