- In a small saucepan, combine the blueberries, 1 tbsp honey, lemon juice, and salt. Cook over medium heat, stirring occasionally, until the berries burst and the sauce thickens slightly, about 5 to 7 minutes.
- Spoon the yogurt into a wide, shallow bowl.
- Scatter the granola around the edge or across the top.
- Spoon the warm compote over the yogurt, drizzle with extra honey if you like, and serve right away.
Notes
The compote can be made ahead and chilled for up to 5 days. Reheat gently or use it cold. Assemble the bowl just before eating so the granola stays crunchy.
