Method
- Combine blueberries, sugar, and water in a small saucepan. Bring to a gentle boil over medium heat, stirring to dissolve sugar, about 3 minutes.
- Reduce heat to low and simmer for 10 to 12 minutes, mashing berries gently as they soften.
- Strain syrup through a fine-mesh strainer, pressing lightly on solids. Transfer to a clean bottle and serve or cool before refrigerating.
Notes
The syrup will look thinner while hot and thicken once chilled. If you want to remove every trace of pulp, strain a second time through cheesecloth after the initial strain.
