Blueberry Quick Bread Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1 cup buttermilk, at room temperature
  • 1/3 cup unsalted butter, melted and cooled slightly
  • 1 large egg, at room temperature
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh blueberries

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan. Whisk flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. In a separate bowl, whisk buttermilk, melted butter, egg, and vanilla until smooth.
  3. Pour the wet mixture into the dry and stir with a spatula just until combined. Gently fold in the blueberries.
  4. Scrape the batter into the pan and bake for 50 to 55 minutes, until a toothpick in the center comes out clean. Cool in the pan 10 minutes, then turn out onto a rack to cool completely.
  5. Once fully cool, slice with a serrated knife and serve.

Notes

The loaf tastes even better the next day after flavors meld, so do not hesitate to bake it ahead. If you use frozen blueberries, keep them frozen and add 5 minutes to the bake time.
