- Combine the blueberries, 1 tablespoon of the honey, and the vanilla in a blender or bowl. Pulse or mash until a chunky sauce forms.
- In a separate bowl, stir the yogurt with the remaining 1 tablespoon honey until smooth.
- Layer yogurt and blueberry sauce in two glasses, beginning and ending with yogurt.
- Top with granola right before serving and eat immediately.
Notes
For the cleanest layers, use a thick, well-chilled yogurt. If your blueberries are very tart, add an extra teaspoon of honey to the sauce. The sauce keeps in the fridge for up to 3 days, but enjoy the assembled parfaits right away while the granola is crisp.
