Blueberry Oatmeal Breakfast Bars Recipe

Ingredients
  

  • 1 ½ cups rolled oats
  • ¾ cup all-purpose flour
  • ½ cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • ½ cup unsalted butter, melted and slightly cooled
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries (keep frozen ones frozen until use)

Method
 

  1. Preheat oven to 350°F (175°C) and line an 8-inch square baking pan with parchment.
  2. Whisk melted butter and brown sugar until smooth, then whisk in egg and vanilla.
  3. Stir in oats, flour, cinnamon, baking powder, and salt until just combined.
  4. Gently fold in the blueberries, then scrape the batter into the pan and press into an even layer.
  5. Bake 25-30 minutes until golden and a toothpick comes out with moist crumbs. Cool completely in the pan, then slice into 9 bars.

Notes

If your kitchen is warm and the blueberries start sticking to your spoon, pop the bowl in the fridge for 5 minutes before folding them in. The bars slice cleanest after a quick chill in the fridge. If you used frozen berries, the bake time might run closer to the 30-minute mark.
