Method
- Preheat oven to 350°F (175°C) and line an 8-inch square baking pan with parchment.
- Whisk melted butter and brown sugar until smooth, then whisk in egg and vanilla.
- Stir in oats, flour, cinnamon, baking powder, and salt until just combined.
- Gently fold in the blueberries, then scrape the batter into the pan and press into an even layer.
- Bake 25-30 minutes until golden and a toothpick comes out with moist crumbs. Cool completely in the pan, then slice into 9 bars.
Notes
If your kitchen is warm and the blueberries start sticking to your spoon, pop the bowl in the fridge for 5 minutes before folding them in. The bars slice cleanest after a quick chill in the fridge. If you used frozen berries, the bake time might run closer to the 30-minute mark.
