Blueberry Hand Pies Recipe

Ingredients
  

  • 1 box (14.1 oz) refrigerated pie crusts (2 count)
  • 2 cups fresh or frozen blueberries
  • ⅓ cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • ½ tsp vanilla extract
  • 1 large egg
  • 1 tbsp water
  • Coarse sugar, for topping

Method
 

  1. Preheat oven to 400°F (200°C). Combine blueberries, sugar, cornstarch, lemon juice, zest, and vanilla in a saucepan. Cook over medium heat, stirring often, until thick, about 5 minutes. Cool.
  2. Unroll pie crusts and cut into six 4-inch circles. Re-roll scraps once if needed.
  3. Spoon a tablespoon of cooled filling onto each circle. Fold dough over to form a half-moon and press edges with a fork to seal. Cut a small vent on top.
  4. Beat egg with water and brush over pies. Sprinkle generously with coarse sugar.
  5. Place on a parchment-lined baking sheet and bake 20 to 22 minutes, until deep golden. Cool 10 minutes before serving.

Notes

Frozen blueberries work straight from the freezer; no need to thaw. Let the pies rest for those 10 minutes so the filling sets up slightly and doesn't burn your mouth.
