Blueberry Grilled Cheese Recipe

Ingredients
  

  • 4 slices sourdough bread
  • 4 oz brie cheese, rind removed
  • 1/2 cup fresh blueberries
  • 1 tbsp honey, plus more for drizzling
  • 1 tsp lemon juice
  • 1/4 tsp fresh thyme leaves (optional)
  • 1 tbsp unsalted butter, softened
  • Pinch of salt

Method
 

  1. Stir blueberries, honey, lemon juice, and salt in a small bowl. Microwave 30 seconds or heat in a pan over medium heat for about 2 minutes until the berries burst and thicken slightly.
  2. Spread butter on one side of each bread slice. Layer brie and blueberry mixture on the unbuttered sides of two slices. Add thyme if using, then top with remaining bread, buttered side out.
  3. Cook sandwiches in a large nonstick skillet over medium heat for 3 to 4 minutes per side, pressing gently, until deep golden and the cheese melts.
  4. Drizzle with extra honey, slice diagonally, and serve right away.

Notes

If your blueberries are very tart, add an extra drizzle of honey to the finished sandwich. This grilled cheese is best fresh while the cheese is still stretchy.
