- Preheat the oven to 350°F (175°C) and line an 8-inch square pan with parchment. Stir the oats, flour, baking powder, cinnamon, and salt in a large bowl.
- In another bowl, whisk the melted butter, honey, egg, and vanilla until smooth.
- Pour the wet mixture over the dry and stir to combine. Fold in the blueberries gently.
- Press the batter into the pan in an even, firm layer. Bake 25 to 28 minutes, until the edges are golden and the top is set.
- Cool the pan on a wire rack for 30 minutes, lift out the slab, cool 15 minutes more, then slice into bars with a sharp knife.
Notes
The wait is worth the neatest bars: cool the slab completely, and for really clean cuts, chill it in the fridge for 20 minutes before slicing. If using frozen blueberries, keep them frozen and fold in at the last moment.
