Blueberry French Toast Casserole Recipe

Ingredients
  

  • 1 loaf (about 1 lb) day-old challah or brioche
  • 8 large eggs
  • 2 cups whole milk
  • 1/3 cup plus 1 tablespoon granulated sugar, divided
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 2 cups fresh or frozen blueberries
  • Butter for the dish

Method
 

  1. Butter a 9x13-inch dish. Cut bread into 1-inch cubes and spread evenly in the dish.
  2. Whisk eggs, milk, 1/3 cup sugar, vanilla, cinnamon, and salt until smooth. Pour over bread and press down gently.
  3. Scatter blueberries on top, sprinkle with remaining 1 tablespoon sugar, cover, and refrigerate at least 4 hours or overnight.
  4. Preheat oven to 350°F (175°C). Uncover casserole and bake 45–50 minutes until puffed and golden.
  5. Let rest 5 minutes, dust with powdered sugar, and serve warm with maple syrup.

Notes

The uncooked casserole needs at least 4 hours in the fridge, so plan ahead. If you like a deeper purple swirl, stir a handful of the blueberries into the bread before adding the custard.
