Blueberry Crumble Pie Recipe

Ingredients
  

  • 1 unbaked 9-inch pie crust
  • 2/3 cup (135g) granulated sugar
  • 3 tbsp cornstarch
  • 1 tbsp lemon zest
  • 1/4 tsp fine sea salt
  • 5 cups fresh blueberries
  • 1 tsp vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (45g) old-fashioned rolled oats
  • 1/2 cup (105g) packed light brown sugar
  • 1/2 tsp ground cinnamon
  • 6 tbsp (85g) cold unsalted butter, cubed

Method
 

  1. Mix the flour, oats, brown sugar, cinnamon, and salt for the crumble. Cut in the cold butter until the mixture looks like damp sand with pea-sized lumps. Chill.
  2. Whisk the sugar, cornstarch, lemon zest, and salt. Add the blueberries and vanilla, and fold until the berries are evenly coated.
  3. Roll the dough into a 12-inch circle, fit it into a 9-inch pie plate, crimp the edges, and refrigerate for 15 minutes.
  4. Preheat the oven to 375°F (190°C). Spoon the filling into the chilled crust, scatter the crumble on top, and bake on a rimmed baking sheet for 50 to 55 minutes, until bubbling and deep golden.
  5. Cool on a wire rack for at least 3 hours before slicing. Serve at room temperature.

Notes

If using frozen berries, the pie may need an extra 5 minutes in the oven. Let the pie cool fully for clean slices; warm pie will be runny.
