- Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment. Combine flour, 1/4 cup sugar, and salt. Cut in cold butter until crumbly, press into pan, and bake 15 minutes until edges are golden.
- Beat cream cheese with 1/3 cup sugar until smooth. Beat in egg, vanilla, and 1 tbsp flour just until combined. Pour over the crust.
- In a saucepan, cook blueberries, 2 tbsp sugar, lemon juice, and cornstarch over medium heat, stirring, until thick and glossy, 5 to 7 minutes. Cool slightly.
- Drop spoonfuls of the blueberry mixture over the filling and gently swirl with a knife to create ribbons.
- Bake for 35 to 40 minutes until edges are set and center jiggles slightly. Turn off the oven, crack the door, and let cool 10 minutes. Cool completely on a rack, then chill at least 2 hours. Slice and serve cold.
Notes
The bars need at least 2 hours of chilling time after baking, which is not included in the prep or cook time. For the best flavor and texture, make them a day ahead and chill overnight.
