Blueberry Cream Cheese Bars Recipe

Ingredients
  

  • 1 cup (125g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (113g) unsalted butter, cold and cubed
  • Pinch salt
  • 8 oz (226g) cream cheese, softened
  • 1/3 cup (67g) granulated sugar
  • 1 large egg, at room temperature
  • 1 tsp vanilla extract
  • 1 tbsp all-purpose flour
  • 1 1/2 cups (200g) fresh or frozen blueberries
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 2 tsp cornstarch

Method
 

  1. Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment. Combine flour, 1/4 cup sugar, and salt. Cut in cold butter until crumbly, press into pan, and bake 15 minutes until edges are golden.
  2. Beat cream cheese with 1/3 cup sugar until smooth. Beat in egg, vanilla, and 1 tbsp flour just until combined. Pour over the crust.
  3. In a saucepan, cook blueberries, 2 tbsp sugar, lemon juice, and cornstarch over medium heat, stirring, until thick and glossy, 5 to 7 minutes. Cool slightly.
  4. Drop spoonfuls of the blueberry mixture over the filling and gently swirl with a knife to create ribbons.
  5. Bake for 35 to 40 minutes until edges are set and center jiggles slightly. Turn off the oven, crack the door, and let cool 10 minutes. Cool completely on a rack, then chill at least 2 hours. Slice and serve cold.

Notes

The bars need at least 2 hours of chilling time after baking, which is not included in the prep or cook time. For the best flavor and texture, make them a day ahead and chill overnight.
