- Combine the blueberries, sugar, water, and lemon juice (if using) in a small saucepan. Set over medium heat and stir until the sugar dissolves, about 2 minutes.
- Bring the mixture to a gentle boil, then lower the heat and simmer for 10 minutes, gently mashing the berries with the back of a spoon as they soften.
- Strain the hot syrup through a fine-mesh sieve into a heatproof bowl or measuring cup, pressing the pulp lightly. Pour into a jar, cool, and drizzle over coffee.
Notes
If you want a thicker syrup for pancakes, simmer it for an extra 3 to 5 minutes before straining. The syrup keeps best in a sealed jar in the fridge, and a quick shake before each use brings it back together.
