Blueberry Chia Seed Pudding Recipe

Ingredients
  

  • ¼ cup (40g) chia seeds
  • 2 cups (480ml) milk of choice
  • 1 cup (140g) fresh blueberries, plus extra for topping
  • 2 tbsp maple syrup
  • ½ tsp vanilla extract
  • Pinch of salt

Method
 

  1. Mash the blueberries in a bowl with a fork until syrupy, about 1 minute.
  2. Whisk in the milk, maple syrup, vanilla, and salt. Add the chia seeds and whisk for 30 seconds. Let sit 10 minutes, then whisk again for 15 seconds.
  3. Divide into 4 jars, press a few blueberries into the top, and refrigerate for at least 4 hours before eating.

Notes

The hands-on time is quick, but the pudding needs at least 4 hours in the fridge to set, so plan ahead. Overnight works best.
