Ingredients
  

  • 8 oz full-fat cream cheese, softened
  • 1 (14 oz) can sweetened condensed milk
  • 2 cups heavy cream, cold
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 4 graham cracker sheets, crushed
  • Pinch of fine sea salt

Method
 

  1. In a small saucepan, cook the blueberries, sugar, and lemon juice over medium heat for 8 to 10 minutes until thick and saucy. Remove from heat and cool completely.
  2. Beat the cream cheese in a large bowl until smooth, then beat in the condensed milk, vanilla, and salt until glossy.
  3. In a separate cold bowl, whip the heavy cream to stiff peaks, about 3 to 4 minutes.
  4. Fold the whipped cream into the cream cheese mixture gently until no white streaks remain.
  5. Spread half the base into a 9x5-inch loaf pan. Dollop half the cooled blueberry sauce and half the crushed graham crackers on top, then swirl with a knife. Repeat with the remaining base, sauce, and crumbs. Press plastic wrap onto the surface and freeze for at least 6 hours.
  6. Scoop into bowls and serve.

Notes

Let the ice cream sit at room temperature for about 5 minutes before scooping for the smoothest texture. Ensure the blueberry sauce is completely cooled before layering so it does not melt the base.
