Blueberry Cheesecake Bars Recipe

Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh or frozen blueberries
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 1 tbsp water

Method
 

  1. Preheat oven to 350°F. Line an 8x8 pan with parchment. Mix crust ingredients, press into pan, and bake 10 minutes.
  2. Cook blueberries, 2 tbsp sugar, and lemon juice over medium heat until juicy. Mash some berries, stir in cornstarch slurry, and cook 1 minute until thick. Cool.
  3. Beat cream cheese and 1/2 cup sugar until smooth. Mix in sour cream and vanilla. Add eggs one at a time on low speed.
  4. Pour filling over crust. Drop spoonfuls of blueberry mixture on top and swirl with a knife.
  5. Bake 35–40 minutes until edges are set and center jiggles slightly. Cool on a wire rack 1 hour, then chill at least 4 hours.
  6. Lift out bars, slice into 9 squares, and serve cold.

Notes

Chilling time is not included in the prep or cook time. Let the bars sit at room temperature for about 10 minutes before slicing if you have trouble cutting them straight from the fridge. The crust stays crisp for days when stored properly.
