Method
- Heat oven to 425°F (220°C). Place butter in an 8-inch square baking dish and put in oven to melt, about 5 minutes. Whisk flour, sugar, baking powder, and salt in a large bowl.
- Pour cold buttermilk and vanilla over dry ingredients. Stir until just combined and a thick batter forms; do not overmix.
- Gently fold in blueberries with a spatula, using light strokes to avoid crushing them.
- Carefully remove hot dish from oven. Pour batter over melted butter, spreading slightly. Butter will pool around edges. Sprinkle with coarse sugar if using.
- Bake 28 to 32 minutes until top is golden brown and a toothpick inserted in center comes out clean.
- Cool 5 minutes, then slice into 9 squares and serve warm.
Notes
If using frozen blueberries, do not thaw them; the bake time may need an extra 2 or 3 minutes. An 8-inch dish makes thick, tall biscuits; a 9-inch dish makes thinner, crispier ones.
