Ingredients
  

  • 2 cups (250g) all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp fine sea salt
  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1/2 cup (120ml) buttermilk
  • 2 cups (300g) fresh blueberries
  • 1/2 cup (65g) all-purpose flour
  • 1/2 cup (100g) packed light brown sugar
  • 1 tsp ground cinnamon
  • 1/4 cup (56g) cold unsalted butter, cubed

Method
 

  1. Make the streusel: combine flour, brown sugar, and cinnamon. Work in cubed butter with fingers until clumpy. Chill.
  2. Preheat oven to 350°F (175°C). Butter a 9-inch springform or round cake pan.
  3. Beat softened butter and granulated sugar until pale and fluffy, about 3 minutes. Beat in eggs one at a time, then vanilla.
  4. Whisk the 2 cups flour, baking powder, and salt. Add to butter mixture in three additions, alternating with buttermilk in two additions, mixing just until combined.
  5. Fold in blueberries gently with a spatula. Scrape batter into prepared pan and smooth the top.
  6. Sprinkle chilled streusel evenly over the batter. Bake 45-55 minutes until golden and a toothpick in the center comes out with moist crumbs (tent with foil if browning too fast).
  7. Cool in the pan on a wire rack for 20 minutes, then remove sides or invert. Slice and serve warm or at room temperature.

Notes

If using frozen blueberries, do not thaw them first. The cake keeps moist for days. For the cleanest slices, let it cool completely before cutting, though it’s hard to resist warm.
