Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 cup mashed overripe banana
  • 1/3 cup full-fat sour cream
  • 1 tsp vanilla extract
  • 1 1/4 cups fresh blueberries

Method
 

  1. Preheat oven to 350°F (175°C) with a rack in the middle. Grease a 9x5-inch loaf pan and line with parchment.
  2. Mash banana in a large bowl. Whisk in melted butter, sugar, eggs, sour cream, and vanilla until glossy.
  3. Sift flour, baking soda, and salt over the wet mixture. Fold with a spatula just until no dry spots remain.
  4. Gently fold in the blueberries until evenly distributed, about 8–10 strokes.
  5. Scrape batter into the loaf pan and bake 55–60 minutes until a toothpick inserted in the center comes out with just a few moist crumbs.
  6. Cool in the pan 10 minutes, then lift out and cool completely on a rack before slicing.

Notes

The loaf needs to cool fully before you get clean slices. If you can’t wait, a serrated knife and a gentle sawing motion help, but expect slightly crumbly pieces when it’s still warm.
