- Divide beef into 4 equal portions, shape into 3/4-inch thick patties, and press a dimple in the center. Season both sides with salt and pepper.
- Cook bacon in a cold large skillet over medium heat until crisp, about 6 minutes. Transfer to a plate and reserve the drippings.
- Increase heat to medium high, sear patties in the bacon fat for 4 minutes, flip, top each with 1 oz blue cheese, and cook 3 to 4 minutes more, covering in the last minute to melt the cheese.
- Butter the cut sides of the buns and toast in a dry skillet over medium heat until golden, about 2 minutes.
- Stir garlic into mayonnaise, spread on the bottom buns, and top with lettuce, tomato, onion, the cheese crusted patty, and broken bacon. Serve immediately.
Notes
If your bacon renders more than a thin layer of fat, pour off all but a tablespoon so the patties sear instead of fry. Use firm cold blue cheese for the best crust.
