Blue Boba Milk Tea Recipe

Ingredients
  

  • 1/4 cup dried boba pearls
  • 1 tbsp dried butterfly pea flowers
  • 1 cup boiling water
  • 1 cup milk
  • 2 tbsp simple syrup or honey
  • 2 tbsp brown sugar (optional, for coating)
  • 1 tbsp water (for brown sugar syrup)
  • Ice cubes

Method
 

  1. Boil water in a pot, add 1/4 cup boba pearls, and simmer for 15 minutes. Cover and let sit 5 minutes, then drain and rinse.
  2. Pour 1 cup boiling water over 1 tbsp butterfly pea flowers, steep 5-7 minutes, then strain and cool.
  3. In a small pan, dissolve 2 tbsp brown sugar with 1 tbsp water over low heat, toss in cooked boba, and remove from heat.
  4. Spoon boba into a tall glass, add ice, pour in the tea, then the 1 cup milk. Stir gently and serve with a wide straw.

Notes

If you’re not serving the drink right away, keep the boba in a little syrup separate from the tea so they don’t harden. Using butterfly pea powder? Whisk 1 teaspoon with the hot water instead of the whole flowers.
