- Preheat oven to 375°F and line a 12-cup muffin tin. Blend cottage cheese, eggs, oil, sugar, and vanilla until smooth.
- Whisk flour, baking powder, baking soda, salt, and lemon zest. Stir in the blended mixture just until combined, about 20 seconds.
- Toss blueberries with 1 tsp flour; fold into batter with a few strokes until incorporated.
- Divide batter among cups. Bake 20 to 22 minutes, until golden and a toothpick comes out clean. Cool in pan 5 minutes.
- Transfer to a rack, cool at least 15 minutes, and serve warm.
Notes
Fresh blueberries work best, but frozen ones can be used straight from the freezer. If your cottage cheese is very wet, drain it briefly before blending.
