- Heat the Blackstone to high and oil the surface. Divide beef into 8 loose 3-ounce balls while the griddle preheats, then season lightly with salt and pepper.
- Place the balls on the griddle with space between them, top with parchment, and smash each into a ¼-inch patty using stiff pressure for 5 seconds.
- Sear for 90 seconds without moving, then flip each patty, add cheese, and cook 60 seconds more.
- Move patties to a cooler area, butter the buns, and toast them cut side down on the griddle for 30 seconds.
- Stack two patties on each bottom bun, dress with sauce, onions, and pickles, then cap with the top bun and serve hot.
Notes
The patties cook so fast that you should have all your toppings, buns buttered, and cheese slices unwrapped before the first smash. If your griddle runs slightly cooler, you might need an extra 15 seconds on each side, but the center will still be cooked through by the time the crust forms.
