Blackstone Chicken Breast Recipe

Ingredients
  

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 tbsp unsalted butter

Method
 

  1. Pound the chicken breasts to an even 3/4 inch thickness between two sheets of plastic wrap.
  2. Pat the chicken dry, coat with olive oil, and rub all over with salt, pepper, garlic powder, and smoked paprika. Let sit 5 minutes.
  3. Preheat a Blackstone griddle to medium high heat, about 400°F. Cook the chicken for 4 minutes without moving until the bottom releases.
  4. Flip the chicken, add the butter to the griddle, and baste the tops with the foaming butter while cooking another 3 to 4 minutes, until the internal temperature reaches 160°F.
  5. Rest the chicken on a cutting board for 3 to 4 minutes, then slice against the grain and serve.

Notes

Rest the chicken off the heat for a few minutes before slicing so the juices settle back into the meat. If you’re cooking for a crowd, you can hold the cooked chicken in a 200°F oven for up to 15 minutes without drying it out.
