Method
- Pound the chicken breasts to an even 3/4 inch thickness between two sheets of plastic wrap.
- Pat the chicken dry, coat with olive oil, and rub all over with salt, pepper, garlic powder, and smoked paprika. Let sit 5 minutes.
- Preheat a Blackstone griddle to medium high heat, about 400°F. Cook the chicken for 4 minutes without moving until the bottom releases.
- Flip the chicken, add the butter to the griddle, and baste the tops with the foaming butter while cooking another 3 to 4 minutes, until the internal temperature reaches 160°F.
- Rest the chicken on a cutting board for 3 to 4 minutes, then slice against the grain and serve.
Notes
Rest the chicken off the heat for a few minutes before slicing so the juices settle back into the meat. If you’re cooking for a crowd, you can hold the cooked chicken in a 200°F oven for up to 15 minutes without drying it out.
