- Cook diced bacon on a preheated 400°F griddle for 5 to 6 minutes until crisp. Transfer to a paper towel-lined plate, leaving the fat.
- Add olive oil to the griddle, place sprouts cut side down in a single layer, and sear undisturbed 4 to 5 minutes. Flip, season with salt and pepper, and cook 3 to 4 minutes more.
- Reduce heat to medium, drizzle balsamic over the sprouts, and toss for about 30 seconds until a sticky glaze forms. Stir in the bacon.
- Pile everything onto a platter, scraping up any caramelized bits, and serve immediately.
Notes
If your sprouts are on the smaller side, they will cook a little faster, so check a minute early. A basic balsamic vinegar works best here; the thick aged kind can scorch.
