Blackened Shrimp Tacos Recipe

Ingredients
  

  • 1 lb large shrimp (21 to 25 count), peeled and deveined
  • 2 tbsp vegetable or avocado oil
  • 8 small corn tortillas
  • 2 cups finely shredded green cabbage
  • 3 tbsp mayonnaise
  • 1 lime
  • Small handful cilantro leaves, roughly chopped
  • 1 ½ tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp kosher salt
  • ¼ tsp cayenne pepper
  • ¼ tsp black pepper

Method
 

  1. Pat the shrimp dry, then toss with 1 tbsp oil and all the spices in a bowl.
  2. Heat a cast iron skillet over high heat for 2 minutes, add the remaining oil, and sear shrimp in a single layer for 2 minutes per side until blackened and opaque. Work in batches if needed.
  3. While the shrimp cook, toss the cabbage with mayonnaise, juice from half a lime, and a pinch of salt. Stir in cilantro.
  4. Warm tortillas in a dry skillet over medium heat for about 20 seconds per side. Pile shrimp and slaw onto each tortilla and serve with lime wedges.

Notes

The slaw can be made a few hours ahead and chilled. Let the shrimp rest on the plate for just a minute after cooking so the juices settle, but serve right away while they’re hot.
