Ingredients
  

  • 4 (6 oz) cod fillets, skinless
  • 2 tbsp avocado oil
  • 2 tsp smoked paprika
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp brown sugar
  • Lemon wedges, for serving

Method
 

  1. In a small bowl, combine smoked paprika, cayenne, garlic powder, onion powder, thyme, salt, pepper, and brown sugar.
  2. Pat cod fillets dry and coat both sides generously with the spice mixture, pressing to adhere. Let sit for 5 minutes.
  3. Heat a cast-iron skillet over high heat until smoking hot, about 4 minutes. Add avocado oil, then place fillets in a single layer. Cook 3-4 minutes per side, until crust is dark and fish flakes easily.
  4. Transfer to plates, squeeze lemon over the top, and serve with extra lemon wedges.

Notes

Cook time varies with fillet thickness; see the thickness table in the tips section. For a milder version, reduce the cayenne or pair the fish with a cooling sauce.
