- In a small bowl, combine smoked paprika, cayenne, garlic powder, onion powder, thyme, salt, pepper, and brown sugar.
- Pat cod fillets dry and coat both sides generously with the spice mixture, pressing to adhere. Let sit for 5 minutes.
- Heat a cast-iron skillet over high heat until smoking hot, about 4 minutes. Add avocado oil, then place fillets in a single layer. Cook 3-4 minutes per side, until crust is dark and fish flakes easily.
- Transfer to plates, squeeze lemon over the top, and serve with extra lemon wedges.
Notes
