- Press the tofu for 10 minutes, then cut into 1-inch cubes and toss with cornstarch until coated.
- Heat oil in a skillet over medium-high. Fry tofu in a single layer for 3 to 4 minutes per side until golden and crisp. Transfer to a plate.
- In the same skillet, sauté onion and bell pepper for 2 minutes. Add garlic, then soy sauce, dark soy sauce, brown sugar, and black pepper. Simmer for 1 minute until glossy.
- Return tofu to the skillet, toss to coat, and cook 1 more minute. Slide onto a plate, top with scallions, and serve immediately.
Notes
Serve right away for the crispiest texture. The sauce will soften the tofu over time, but you can re-crisp in a hot skillet if needed. Leftovers taste even better the next day.
