- In a small bowl, whisk together the soy sauce, honey, rice vinegar, ginger, and garlic. Set aside.
- Pat the fillets dry and season with salt. Heat the neutral oil in a large skillet over medium-high heat until shimmering.
- Place the fillets in the pan and sear untouched for 4 to 5 minutes, until the bottom is deep golden.
- Lower the heat to medium, flip the fillets, and pour the glaze around them. Cook 2 to 3 minutes, spooning glaze over the fish as it thickens.
- Remove from heat, drizzle with sesame oil, and plate. Spoon extra pan glaze over the fish and top with scallions.
Notes
Black cod is naturally fatty, so it stays tender even with a little extra time in the pan. If the glaze reduces too quickly, add a splash of water and swirl the pan to loosen it. For the best texture, serve immediately while the edges are still crisp.
