Black Bean Stew Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 2 (15 oz) cans black beans, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes
  • 2 cups vegetable broth
  • 1 bay leaf
  • Salt and black pepper
  • Juice of 1/2 lime

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion and bell pepper; cook 6 minutes until softened.
  2. Stir in garlic, cumin, smoked paprika, and oregano; cook 1 minute.
  3. Add beans, tomatoes, broth, and bay leaf. Bring to a boil, then simmer uncovered for 15 minutes, stirring occasionally.
  4. Remove bay leaf, stir in lime juice, and season with salt and pepper. Ladle into bowls and serve with your favorite toppings.

Notes

For a thicker stew, mash a few beans against the pot in the last few minutes. Leftovers keep refrigerated up to 4 days; add a splash of broth when reheating.
