Black Bean Dip Recipe

Ingredients
  

  • 2 (15 oz) cans black beans, drained and rinsed
  • 3 tbsp fresh lime juice
  • 1 tbsp extra-virgin olive oil, plus more for drizzling
  • 2 garlic cloves, peeled
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1 small jalapeño, seeded and minced
  • 2 tbsp water, plus more as needed
  • 2 tbsp chopped fresh cilantro, plus more for topping

Method
 

  1. Place drained beans, lime juice, olive oil, garlic, cumin, salt, and jalapeño in a food processor. Pulse to combine, then blend on high for about 2 minutes until smooth.
  2. Scrape down the sides, then add 2 tbsp water and blend another 30 to 45 seconds. Add more water a tablespoon at a time for a thinner dip.
  3. Spoon the dip into a bowl, drizzle with olive oil, and top with cilantro and jalapeño slices. Serve right away.

Notes

The dip tastes best after sitting for 15 to 30 minutes to let the flavors meld, but it’s still delicious straight from the blender. If you make it ahead, hold the cilantro garnish until just before serving so it stays bright green.
