Black Bean Chili Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 1 to 2 chipotle peppers in adobo sauce, minced
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 (15 oz) cans black beans, drained and rinsed
  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 2 cups vegetable broth
  • 1 tsp kosher salt, plus more to taste
  • Fresh cilantro, diced avocado, and lime wedges for serving

Method
 

  1. Heat the oil in a large pot over medium heat. Add the onion and cook until soft, about 5 minutes. Stir in the garlic for 30 seconds.
  2. Move the onion aside, add the chipotle peppers, cumin, and paprika, and stir for 1 minute until fragrant.
  3. Add the black beans, tomatoes with their juices, vegetable broth, and 1 tsp salt. Bring to a simmer, then reduce heat to medium-low. Cook uncovered for 25 to 30 minutes, stirring occasionally, until the chili thickens. Taste and add more salt if needed.
  4. Ladle into bowls and top with cilantro, avocado, and lime. Serve hot.

Notes

The chili thickens as it cools, so if you’re reheating leftovers, stir in a splash of broth to bring it back to a ladle-friendly consistency. The lime and avocado are best added fresh right before eating.
