- Heat the oil in a large pot over medium heat. Add the onion and cook until soft, about 5 minutes. Stir in the garlic for 30 seconds.
- Move the onion aside, add the chipotle peppers, cumin, and paprika, and stir for 1 minute until fragrant.
- Add the black beans, tomatoes with their juices, vegetable broth, and 1 tsp salt. Bring to a simmer, then reduce heat to medium-low. Cook uncovered for 25 to 30 minutes, stirring occasionally, until the chili thickens. Taste and add more salt if needed.
- Ladle into bowls and top with cilantro, avocado, and lime. Serve hot.
Notes
The chili thickens as it cools, so if you’re reheating leftovers, stir in a splash of broth to bring it back to a ladle-friendly consistency. The lime and avocado are best added fresh right before eating.
