Black Bean Burger Recipe

Ingredients
  

  • 2 (15-oz) cans black beans, drained and rinsed
  • 1 flax egg (1 tablespoon ground flaxseed plus 3 tablespoons water)
  • ½ cup finely diced yellow onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ cup all-purpose flour
  • ½ cup panko breadcrumbs
  • 2 tablespoons neutral oil, for cooking
  • 4 burger buns, split and toasted
  • Lettuce, tomato, onion, pickles, or your favorite toppings

Method
 

  1. Stir the flaxseed and water together and set aside to thicken. Drain, rinse, and pat the black beans dry, then mash in a large bowl, leaving some beans whole.
  2. Add the onion, garlic, cumin, smoked paprika, salt, pepper, flour, panko, and thickened flax egg. Mix until everything comes together.
  3. Shape into 4 patties about ½ inch thick. Chill for at least 15 minutes.
  4. Heat the oil in a large skillet over medium heat. Pan-fry the patties 4 to 5 minutes per side until crisp and golden.
  5. Place the patties on toasted buns and pile on your toppings. Serve hot.

Notes

Uncooked patties can be refrigerated overnight or frozen for up to 3 months. Cook straight from chilled or thawed, adding an extra minute or two per side.
