Ingredients
  

  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn kernels (canned, drained, or thawed frozen)
  • 1 red bell pepper, finely diced
  • ½ small red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • ¼ cup chopped fresh cilantro
  • 3 tbsp fresh lime juice
  • 1 tbsp olive oil
  • ½ tsp ground cumin
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Method
 

  1. In a large bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper until the salt dissolves.
  2. Add the black beans, corn, bell pepper, onion, and jalapeño. Stir until everything is well coated.
  3. Fold in the cilantro. Taste, adjust salt or lime, and serve. For best flavor, let it sit 10 minutes before digging in.

Notes

If the salsa tastes flat, a little more salt or lime usually fixes it. The flavors deepen as it sits, so it's even better after 20 minutes on the counter.
